Sažetak

In this paper, allergens in meat and meat products are described. The paper also describes the methods of food allergy testing, as well as the rules for labelling allergens on disclaimers. Since most allergens are an integral part of food of animal origin, it is necessary to comply with the manufacturer's legal regulations on allergen declaration and to make consumers aware of the product they are buying.
