Abstract

In order to protect public health and ensure the safety of live bivalves intended for human consumption, the values of microbiological parameters of E. coli that may occur in the flesh and intravalvular liquid, at the production level in the production and the relaying areas, are controlled through a monitoring program and a sampling plan. In connection with the aforementioned, the competent authority - the Ministry of Agriculture, the Directorate responsible for veterinary medicine and food safety has the obligation to prepare a sanitary survey, to form and enact the Plan of monitoring the sea and molluscs quality in the production and the relaying areas, as well as of classifying the production and relaying areas from which they authorise the harvesting of live bivalve molluscs as A, B or C class production areas, depending on the level of the faecal contamination/marine pollution
